What is a capataz

The "Capataz" was the person in charge of the farming and the management of a ranch or farm. This man knew the work in the fields, in the corrals and the roundup or rodeo; he did this on foot or on horseback. In front of his farm workers he had to be an example of honesty, love and friendliness towards his family and work so he was respected and his orderers were obeyed.
